Nitrito
Valdarno di Sopra Cabernet Sauvignon Doc
An organic wine obtained from a vineyard worked with draught horses, a further step towards sustainability. Thanks to the lower soil compression exerted by the horses, the land is more oxygenated, hydrated, and rich in microorganisms. The name Nitrito (Neigh) recalls the sound of the horse, almost a greeting that echoes across the countryside, accompanying the work in the vineyard.
The product
The 2020 vintage was characterized by a dry and mild winter, followed by a spring with quite high temperatures until May, interrupted by a series of copious downpours in June, which gave way to a very hot summer. A few thunderstorms at the beginning of September led to a fairly early harvest, with excellent quality in the gathered grapes.
Food Pairings
The wine is suitable for pairings with sophisticated meat and game dishes, such as venison fillet and wild boar stew.
