Occhio di Pernice Doc
Vinsanto “Occhio di Pernice” is a jewel of the finest Tuscan tradition. Once harvested, the grapes are hung in well-ventilated areas to dry and are vinified only once they have reached the right level of desiccation.
The product
In 2016, an irregular winter and spring were followed by a summer and autumn with high temperatures, fine weather, and significant temperature fluctuations between day and night, which allowed for optimal grape ripening, resulting in an exceptional wine.
Food Pairings
Ideal not only with dry pastries, but also with aged and blue cheeses.
